I (Marty Grant) am a 3rd Great Grand nephew of Thomas Gilbert, assuming that one unproven connection is correct.
Thomas Gilbert was born ca 1806/07 in North Carolina. If he is the son of Wilson Gilbert, as I suspect, then he was probably born in Chatham County. Otherwise, I don't know where he might have been born. Since Thomas was in Yancey County later on, he may have been born in that area (though it was still part of Buncombe and Burke in the 1807 timeframe).
At the time of the 1810 census, there were only two Gilberts in Burke County (none in Buncombe), and neither of them (James and Michael Gilbert) had a son under 10 (born ca 1800/10), which is where Thomas would fit. In the 1820 census, only James Gilbert was in Burke (none in Buncombe), and again, he had no one Thomas' age with him.
In 1810, Thomas would have been about 3 years old, so if enumerated, he should be in the "under 10" age group. His probable father Wilson Gilbert was listed in Chatham County, North Carolina that year, and he had six apparent sons in that age group, one of them probably being Thomas.
In 1820, Thomas would have been about 13 years old, so he should be in age 10-15 category (born ca 1804/10). I was unable to locate his probable father Wilson on the 1820 census.
By the time of the 1830 census, there were three Gilbert families in Burke, and five in Buncombe. None of the Buncombe County Gilberts had a male in the 20-29 age group, (born ca 1800/10), but in Burke, Wilson Gilbert did have an apparent son this age.
We know from other records that Wilson Gilbert arrived in Burke County in the 1820's, and that he lived in or near the Three Mile Creek area (that became Yancey County), and this is exactly where Thomas lived. Add this to the fact that Wilson had a son Thomas's age, and we have circumstantial evidence that Thomas Gilbert is a son of Wilson and Esther Gilbert. There seem to be no other viable choices at present. Wilson Gilbert of Burke / Yancey was was in Chatham County, NC in the 1800 through 1817 timeframe, so, that means that Thomas (if his son) was born in Chatham County, NC.
Yancey County was created from part of Burke in 1833, including the Three Mile Creek area.
Thomas Gilbert was listed on the Voter List for the 1835 Congressional Elections. He voted in Yancey County, NC in Oakes Precinct. Also voting in that precinct were his suspected siblings Joshua Gilbert, Daniel Gilbert, and their suspected father Wilson Gilbert.
Thomas Gilbert married Rebecca --- in the 1830/1840 timeframe in Yancey County, NC. I don't know what her maiden name might have been.
Thomas Gilbert was listed on the 1840 census in Yancey County, NC. He had no apparent children yet, so probably had just married, or perhaps weren't married yet (first child born ca 1842). His household seems to contain (besides himself), his widowed mother Esther, his wife and a sister and brother. They were listed between William McGee and John Vance.

Thomas Gilbert was listed on the 1840 tax list in Yancey County in Captain Vance's Company. He was taxed for 100 acres, valued at $75, and he had one white poll (himself), and his tax was $1.87 1/2. In the Spring 1848 term of Yancey County Court, the Valuations of Yancey County lands were all reduced by 33 1/3 cent per acre. Thomas Gilbert was listed in North Toe River District with his land of $150 reduced to $100. Thomas Gilbert and family were listed on the 1850 census in Yancey County, next door to Levi Carpenter and William Carpenter on either side.

Thomas was still in Yancey for the 1860 census, just a couple of houses from his brother Benjamin. They were listed with Spruce Pine for their Post Office, so probably near that community.

In 1861, Mitchell County was formed from several counties, including the portion of Yancey where the Gilberts resided.
Thomas and family were listed on the 1870 census in Mitchell County, in Toe River Township. They were next door to (John) Milton Gilbert, their son.

I did not find Thomas and family on the 1880 census. There was a Thomas Gilbert in neighboring McDowell county in 1880 who might be this same Thomas. His age is a good match, but the rest of the family is troublesome. Here is the listing anyway, just in case:

Thomas and Rebecca Gilbert had eight children per the various census records.I'll not comment on them individually until more data is found.
