I (Marty Grant) am not related to Sarah Hensley as far as I know.
The 1860 census shows them using the "Hinesley" spelling, which might connect them with the Chatham Co, NC Hinesley family.
Sarah A. Hensley was listed in 1840 and 1850 White Co, TN, either a widow, or a single mother. I don't know which is the case. I'll consider her a widow until other evidence confirms or refutes this.
Sarah was born ca 1801/02 in Georgia. I have no idea what county. There were at least two sets of Hensley families in Georgia early on. One line from Caswell Co, NC, another from Chatham Co, NC. Perhaps she is connected with one of these families (if she was born a Hensley, that is).
There may be some connection between Sarah and Elizabeth Hensley (c1800), who was also a widow (or single mother), who was also born in Georgia.
Assuming she was a widow, then I have no clue what her maiden name might have been.
Sarah married a Mr. Hensley before ca 1828 in Tennessee, perhaps in White County. I base this marriage date on her son James who was born ca 1827/28 in TN.
Presumably, this family would be listed somewhere in Tennessee for the 1830 census. First of all, they were not in 1830 White Co, TN. There were only two Hensley's listed there that year (Jeremiah-1793 and Charles-1793). Neither Charles nor Jeremiah was Sarah's husband.
There were numerous Hensley families throughout Tennessee in 1830, but only a few that match somewhat with what we know of Sarah's family. Her family would consist of a husband (presumably), herself, in the age 20-29 category (born ca 1800/10), and at least one male child in the "under 5" age group (ca 1825/30). In 1830 Jefferson Co, TN was Bennett Hansley (c1800/10) with a wife the same age, and one son ca 1825/30. In 1830 Jackson Co, TN was John Hensley (c1790/1800) with a wife and son the right ages. In 1830 Monroe Co, TN was Benjamin Hensley (c1800/10) with a wife and son the right ages. In 1830 Wayne Co, TN was Benjamin Hensley (c1790/1800) with a wife and son the right ages, and also in Wayne Co, TN was James Hensley (c1800/10) with a wife and son the right ages.
Also in 1830, was Obadiah Hensley (c1786) in Overton Co, TN, who later moved to White Co, TN. In 1830, he had "extra" people with him who fit (age-wise) with Sarah and her son James.
All of the 1830 Hensley households that "fit" for Sarah and her son James are those that I have no additional data on, so I don't know if she might belong to one of them. The only exception is for Obadiah Hensley, who is somewhat known. Furthermore, he did move to White Co, TN in the 1830's (same as Sarah, apparently), so perhaps he is her older brother, or brother-in-law.
Sarah's husband died before 1840, for Sarah was listed as head of household on the 1840 census in White Co, TN. Her name was spelled "Hindsley". She was not listed near Charles Hensley (c1793) nor Obadiah Hensley (c1786), who were the only other Hensley's in White Co, TN at the time.
Unfortunately, I don't have the enumerations for Sarah yet from 1840. I'll get those whenever I can. She was on page 34. listed as "Sarah Hindsley".
Sarah Hensley and her son James were listed on the 1850 census in White Co, TN in Civil District Number 8. She was the only Hensley in that district. Her name was spelled "Saroah" as were many other Sarah's for some reason or another. I guess the census taker didn't know how to spell it correctly.

Sarah moved to Van Buren County, Arkansas by 1860, apparently having first gone to Texas briefly. She was in Van Buren County, Arkansas for the 1860 census in Davis Township, living with her son James who was married with children by then.

Sarah Hensley was not found on the 1860 census for White Co, TN, nor was her son James. I didn't find marriage records for them there either. I don't know where they went or if they both died in the 1850's.
Sarah Hensley had one known child, James Hensley (c1828), born in TN. He was with her for the 1850 census. I have a little bit of additional data on him so far.
